1 pack Ceres Organics Herbalicious Fritter Mix
1 medium zucchini, grated
1. Make fritter mix batter according to instructions on packet. Once thickened, mix grated zucchini through.
2. To make one fritter dollop two heaped tablespoons of mixture into a non-stick fry pan. Repeat for each fritter.
3. Fry on medium heat until cooked through and golden brown both sides.
4. Layer avocado, tomato relish, rocket and spring onion in between each fritter and top with cherry tomatoes.
