Everything is made by hand with 100% organic ingredients, their range is entirely free from gluten, dairy, processed sugar and anything remotely artificial.
Jemma, owner and visionary of the business, has offered us a gorgeous recipe of her own to share.
MATCHA GREEN TEA CAKE
FOR THE BASE:
1½ packed cups pitted Medjool dates soaked
3 cups desiccated coconut
1 teaspoon Celtic or Himalayan crystal salt
Whiz all ingredients together until dates are completely broken up and the mixture is dough-like.
Press evenly into a 22cm spring form tin and set aside
FOR THE CAKE:
1 cup melted coconut oil
Juice of 2 limes (keep skin for decoration)
½ cup coconut nectar/agave or honey
3 large avocados
1cup coconut meat
1 heaped tablespoon of Lucuma (optional)
1 heaped teaspoon Matcha Green Tea (powdered)
1 teaspoon salt
¼ cup of coconut water or almond milk (add a little more if mix is too thick to blend).
Combine all the above ingredients in a high speed blender until very smooth.
Refrigerate for at least 4 hours to set or place in the freezer if you are short on time.
Serve chilled with macadamia shavings or crushed pistachios, zested lime curls, goji berries, edible flowers and fresh mint.
