Choc Berry Smoothie Bowl and The Muesli Man

I am a self confessed smoothie-aholic. My day never feels quite right if I don’t start with a smoothie! As of late, my smoothies have turned into smoothie bowls, for two reasons- firstly it means I get to add extra yumminess on top, and secondly, I find the bowl fuels me for longer into the morning.

When I opened up my December Vegan Box and saw the packet of Chocolate Granola from The Muesli Man, a vision of a smoothie bowl came to mind immediately! So today, I raced out of bed (it was actually 4.40am) and made up this little bowl of goodness.

The best thing about smoothies is you can use anything you have on hand- whatever fresh fruit is in season, whatever super foods you may love, whatever plant-based milk you have on hand, any greens that need to be used. They are very versatile and once you play around a little, you will discover your own fuel-proof ways to create the perfect mix! Give this one a try and see how you like it. Oh, and I almost forgot the best part- its a little like eating dessert for breakfast (the healthy kind!)

Ingredients-

  • 1/4 cup of soaked chia seeds (I soak around 2 tablespoons overnight in almond milk)
  • 8 frozen strawberries
  • 1/2 a cucumber
  • 2 kale leaves
  • 1/4 of a ripe avocado
  • 2 teaspoons of cacao
  • 1 teaspoon of maca powder
  • 1 heaped tablespoon of berry powder (I use Bare Blends Bare Berries)
  • 1/4 cup of nut milk

Blend all of the ingredients in your blender until very smooth and creamy, adding enough nut milk to reach your desired constancy, I like mine quite thick so I use just enough to allow it to blend easily. Pour into a bowl and add your toppings.

For the topping-

  • 1 tablespoon of desiccated coconut
  • 1 teaspoon of cacao nibs
  • 1 teaspoon of dried cranberries
  • Fresh red grapes and raspberries
  • 1/4 cup of The Muesli Man’s Chocolate Granola

Top your smoothie bowl with the topping ingredients and enjoy with a spoon!
