Creamy Coconut Vegan Dahl Recipe

This month in our Vegan Box we are featuring a delicious Dahl kit from the Australian company, Love my Earth.

Love My Earth produces certified organic, vegan-friendly products out of the Sunshine Coast in Queensland. Owner, Jessica Holdsworth grew up on an organic health retreat where she developed the taste for enjoying and eating everything from her own backyard.

Jessica has kindly shared a recipe for us using the Dahl Kit in your February Vegan Box. Enjoy!

This creamy coconut vegetable dahl is a perfect vegetarian and vegan meal. It’s full of the traditional flavours of India, with all the hard work done for you already. Dahl is a hearty and nutritious meal, perfect for any time of the day. Just by adding a few extra ingredients along with the dahl mix you will have dinner ready in just 30 mins.


o 1 tablespoon of olive oil

o 1 packet of Love My Earth Dahl mix

o 800 mL of boiling water

o 1 400 mL tin of coconut cream

o 4 cups of mixed vegetables


  1. Add Organic Dahl mix and oil to a saucepan and fry until fragrant.
  2. Add 4 cups of vegetables, water and coconut cream.
  3. Bring to the boil, then reduce heat to a low to medium simmer.
  4. Cook for 30 mins.

Serve with: Yoghurt and Fresh Herbs, Basmati Rice, Quinoa, Roast Vegetables, Zucchini Pasta, Flat Bread or Roasted Cauliflower.
